Winemaking update from Assistant Winemaker Jason Ledbetter

After a great harvest and our holiday break we have been working on one of the best parts of the year, tasting.  We have gone through and started to grade out every lot of wine we have made in 2013 on multiple occasions.  We are currently racking all the 2013 red wines out of barrel, cleaning the barrels and taking the wine back down.  This helps to “clean” the wine up aromatically.  Once we conclude this process we will taste all the wines again and begin to start putting blends together. 

We were so blessed with the 2012 Vintage it is hard to believe that the 2013 Vintage shows early indications to be even better.  The consistent weather and lack of rain post ripening has given us the opportunity to craft some remarkable 2013 lots of wine.  We are ecstatic to begin the blending process early in February.  Once we complete the 2013 blends we will transition into bottling the 2012 Vintage.

Vineyard update from Vineyard Manager Gustavo Avina

Our ponds are empty and the temperature is above normal (70′s).

Right now the only activity at the vineyards is pruning the vines. Our crews are very focused in selecting the best shoots according to vine vigor, too long of shoots may lead to weak vines later on the season. Since we have no rain, pruning is going very fast and with this weather I am predicting bud break earlier than normal. We still have a few more months left for mother nature to fill the reservoirs, which supply most of our water for our growing season.

Be among the first to experience the new Epitome

The Epitome of a vintage—an ideal example or embodiment, created only in exceptional years.
In 2010, our winemaking team was drawn to the fruit bestowed by block three of our Cornerstone Vineyard, set along the northeastern border of the renowned Stags Leap District. Unique in character and rare in number, we release this very special wine in celebration of our 35th anniversary.

VINEYARDS
Block Three of our Cornerstone Vineyard was exclusively selected to tell the story of the 2010 vintage through this stellar bottling. Situated on the northernmost edge of the Stags Leap District, this vineyard is densely planted and the vines are trained low to the ground, in order to produce low yields with optimal, even ripeness.

HARVEST AND WINEMAKING
The 2010 vintage was cooler than usual during the growing season, but ended with a heat wave. As a result, our Cabernet was harvested at an optimal level of ripeness in mid-October. The wine was fermented in French oak puncheons, with punchdowns done daily by hand. Fermentation took place at a high temperature to ensure that maximum extraction was achieved before the wine was racked to 65% new French oak barrels for aging. The wine was aged in barrel for a total of 18 months before bottling.

TASTING NOTES
This intense, opaque ruby wine offers a rich and enchanting nose, teeming wtih aromas of ripe red raspberry, fresh blackberry and cassis, woven beneath elegant layers of fine baker’s cocoa, spun sugar and subtle ground clove. Opening smoothly, with a rush of luscious blackcurrant and black raspberry pie, the velvety palate is supple and balanced by touches of sweet cinnamon and nutmeg, plush tannins and a hint of graham cracker crust on the lasting finish.

PAIRING
Deep and concentrated, the 2010 Epitome Cabernet Sauvignon would make an exquisite accompaniment to a number of beautiful meals, including braised pork shoulder with seasonal vegetables or pan-roasted duck breast with wild mushroom risotto. This exclusive bottling would also pair well with aged Mahón, a hard, flavorful cow’s milk cheese from Spain, for an unforgettable cheese course.

Why are Barrel / Cooperage Trials Important in Winemaking?

Wine education with Pine Ridge Vineyards Assistant Winemaker, Jason Ledbetter.

Choosing the proper barrels for each wine made is a crucial decision in showcasing a wines distinction. Oak influence should always lift the fruit expression of the vineyard where the grapes are grown and enhance the mid palate and body of a wine. We aim to make wines with a sense of place that showcase our Vineyards and the typicity of each sub AVA within the Napa Valley.

A barrel trial is the only way we can grade and determine the effects each cooper has on our fruit. The source of the oak, the toasting profile and the house style each cooper presents will ultimately show up in the final wine that is made. Utilizing a barrel trial for 18 months each Vintage helps us to ensure we are using the proper barrels for each wine we make at Pine Ridge Vineyards.

The right oak barrels for each wine will help soften the tannins and mouth feel while enhancing the aromatics of a wine. Just a few of the common aromatics that come from Oak barrels are vanilla, caramel, graham cracker, clove, spice, chocolate and a sweetness that enhances the fruit from the grape itself.

Learn About Phenolics in Red Wine with Pine Ridge Vineyards Assistant Winemaker, Jason Ledbetter

The 2012 vintage in Napa Valley was an exceptional vintage for free anthocyanin, or available color, in wine. The Pine Ridge Vineyards 2012 Howell Mountain Cabernet Sauvignon was fermented to maximize this color by slowly extracting grape skin and seed tannin during fermentation. This tannin binds with the free anthocyanin to create the luscious mid palate, high end, well crafted Napa Valley Cabernet Sauvignon is known for.

Tannin and free anthocyanin fall under the category of phenolic compounds. The phenolic compounds are found in the grape skin and seeds and are what give red wine color, weight and body. Each vintage these phenolic compounds are slightly different due to the growing season, picking decisions and measures taken in the vineyard. It is up to each winemaker or winemaking team to recognize these differences in phenolic compounds and set fermentation practices to achieve the desired style of wine they would like to make.

2013 Spring Vineyard Operations

The three most important vineyard operations in the annual lifecycle of the vines are pruning, shoot thinning (suckering), and of course, harvest.

Shoot thinning (suckering) is what our vineyard team is doing right now. It consists of removing the unwanted shoots by hand, so the vine concentrates its energy in less shoots, and less clusters of grapes. This step allows for more light inside the canopy, and more air flowing around the fruit.

Shoot thinning is very important for grapes quality, and quantity.
