Citrus Shrimp & Avocado Tostadas: A Fresh Pairing for Chenin Blanc + Viognier

Ingredients
- 1 pound large shrimp, peeled, deveined, and tails removed
- 1 tablespoon olive oil
- ¾ teaspoon kosher salt, divided
- Freshly ground black pepper
- ½ cup finely chopped red onion
- 3 fresh limes, divided
- 2 medium tomatoes, seeded and diced
- 1 jalapeño or serrano chile, seeded and finely chopped
- ½ cup chopped fresh cilantro
- 2 ripe avocados
- 8 crunchy corn tostada shells
Preparation
- Soften the onion: Place the red onion in a small bowl. Add the juice of one lime and a pinch of salt. Toss and let stand for 10 minutes while you prepare the remaining ingredients.
- Cook the shrimp: Pat the shrimp dry and season with the olive oil, ½ teaspoon salt, and several grinds of black pepper. Heat a large skillet over medium-high heat. Cook the shrimp for 2 to 3 minutes per side, until pink, lightly golden, and opaque throughout. Transfer to a cutting board and roughly chop.
- Prepare the shrimp salsa: Drain any excess lime juice from the onion. In a bowl, combine the shrimp, onion, tomatoes, chile, cilantro, and the juice of one lime. Toss gently and taste for seasoning.
- Make the avocado base: Mash the avocados with the juice of the remaining lime and the remaining ¼ teaspoon salt. Leave the mixture slightly textured.
- Assemble: Spread the mashed avocado over each tostada shell. Spoon the shrimp mixture over the top and serve immediately.
