This limited-production blend celebrates several intriguing varietals and provides the perfect showcase for the distinctive velvet blueberry expression of Malbec. Onyx brings together Merlot, Tannat and Malbec—all grown on our densely-planted estate vineyards throughout the Napa Valley.

VINEYARDS

The fruit for this wine was selected from a collection of our estate vineyards throughout the Napa Valley, mainly Carneros, Rutherford and Stags Leap District. The distinctive terroir of these prestigious appellations as well as the dense planting and meticulous farming by our vineyard crews contribute to the richness and complexity of this unique bottling.

HARVEST AND WINEMAKING

The mild 2011 vintage allowed for a long hang time, resulting in evenly ripe, complex flavors in the berries. The fruit for this wine was harvested at an optimal level of ripeness late September to late October. Fermentation took place at a high temperature to ensure that maximum extraction was achieved before the wine was racked to 30% new French oak barrels. The wine was aged in barrel for a total of 18 months before bottling.

TASTING NOTES

Revealing an opaque, ruby-black color in the glass, our latest release of Onyx entices the nose with a diverse bouquet of black cherry, plum and lingonberry fruit, enhanced by wisps of sweet cedar, black licorice and ground cinnamon. The entry is intense, flooding the palate with juicy blueberry and blackberry. The mid-palate is plush and mouthfilling, following with hints of vanilla cream and clove. Elegant tannins linger throughout the finish, joined by a subtle echo of baking spice.

PAIRING

Bold yet refined, this wine would show handsomely when coupled with a hearty dish, like coq au vin over buttered noodles, a pulled pork sandwich or even a grilled ahi tuna steak. For an deliciously memorable cheese course, pair this wine with Idiazabal, an aged ewe’s milk cheese.
