VINEYARDS

The fruit for this wine is grown at our Dos Olivos Vineyard in the Oakville AVA. The well-drained soil and moderate temperature of this valley floor vineyard in conjunction with our attentive farming practices create ideal conditions for the production of deeply fruited and well-extracted Cabernet Sauvignons.

HARVEST AND WINEMAKING

The 2010 vintage was cooler than usual during the growing season, but ended with a heat wave. As a result, the fruit for this wine was harvested at an optimal level of ripeness late September to mid-October. Fermentation took place at a high temperature to ensure that maximum extraction was achieved before the wine was racked to 50% new French oak barrels. The wine was aged in barrel for a total of 18 months before bottling.

TASTING NOTES

A resplendent bouquet of fresh plum, dark currant and bramble berry, shrouded with tones of sweet cedar, charred oak and faint tobacco leaf emanates from the glass in this dark garnet wine. Mirroring the nose, the full, exuberant palate floods with juicy blackberry, supple black raspberry and black cherry fruit, graced by whispers of chocolate pie crust, brown butter and toast. A marvel of structure and grace, the wine finishes strong, supported by muscular tannins and balanced acidity.

PAIRING

This robust yet balanced Cabernet would prove a delicious pairing for dishes from the grill, such as grilled pork chops or chicken with wild mushrooms and red chard. For a delightful cheese course, try this wine with Beecher’s Marco Polo, a hard cow’s milk cheese enhanced with peppercorn from Seattle, Washington.
