Vineyards
Rutherford and Carneros play the starring roles in the 2007 Onyx. Rutherford’s warm temperatures and loamy soils are perfect for Malbec and Tannat, allowing both to reach optimal ripeness. Merlot grown in the rolling hills and cool climate of Carneros provides round, soft fruit that balances the tannic structure of the blend.
Harvest & Winemaking
The 2007 vintage had many ups and downs, with an early, cool start and several heat waves throughout the growing season resulting in smaller bunches of small, intensely flavored berries picked early to mid-September. The grapes were sorted with our signature triple selection process before crushing and macerated on the skins up to 21 days to extract the inky color of the skins. The wines were aged in 35% new French oak for 15 months before being bottled in May 2009.
Tasting Notes
The 2007 Onyx boasts a complex nose abounding in black cherry, plum and berries with intriguing notes of smoke, rose petals, creamy chocolate, tea and leather. The palate offers red cherry, cola and roasted plum flavors alongside brisk acidity and dry, chocolatety tannins that sustain the lengthy finish. Three to five years in the cellar will allow for the palate to open up and match the nose in complexity. Decanting for up to an hour is also recommended.
Food Pairing
The youthful structure of this wine calls out for the rich, rustic dishes of southern France; a salad of Puy lentils with duck confit, white bean ragoût enriched with bacon and sausage or mushroom risotto. As age brings out the wealth of secondary flavors, let them shine by pairing with flavorful meats, like game and dry-aged ribeye steaks, simply prepared.
